INGREDIENTS

  • 3 or 4 aubergines
  • 4 Tbs honey
  • 1/2 cup Coca-Cola
  • 2 Tbs white wine vinegar
  • 1 Tbs Bovril
  • 2 Tbs coconut oil

To serve:

  • chopped parsley
  • feta – to crumble
  • 1 Tbs sesame seeds – toasted

METHOD
Preheat oven to 180’C.  In a saucepan combine the honey, Coca-Cola, white wine vinegar and Bovril. Bring to the boil on medium high heat and allow to reduce until syrupy.

Cut the aubergines in half and score the flesh. Brush the cola mixture over the aubergines with a pastry brush and place on  a greased baking tray in the oven to roast for 25 minutes. Remove from the oven and brush some more of the cola mixture on the aubergines. Place back in the oven to roast until cooked through – about another 15 – 20 minutes.

Once cooked, remove from the oven and allow to cool slightly before serving with the parsley, sesame seeds and feta.

Enjoy with on their own or with fish, chicken or pork.
