INGREDIENTS

Base:

  • 2 packets Tennis biscuits
  • 1/4 cup butter – melted

Filling:

  • 2 tubs cream cheese – softened
  • 1/4 cup Cola syrup (1 can Coca-Cola + ½ cup sugar)
  • 2 egg yolks
  • 1 tsp vanilla

Topping:

  • 2 handfuls coconut flakes

METHOD

Preheat oven to 180’C and line a rectangular baking pan with baking paper.

On a small saucepan combine the coca-cola and the sugar for the syrup. Bring to a boil and allow to reduce until you reach a thick and glossy syrup consistency. Allow to cool.

Crush the Tennis biscuits finely and add the melted butter. Press into the baking pan.

In another bowl combine the filling ingredients, making sure everything is mixed well. Pour this over the base.

Top with coconut and then cover the baking tray with tinfoil before placing in the oven to bake for 45 – 50 minutes.

Remove the tinfoil for the last few minutes of baking so that the coconut gets a little toasted.

Remove from the oven and allow to cool before slicing into squares.
