2 large egg whites
2 cups desiccated coconut
¼ cup castor sugar
handful glace cherries – quartered
½ cup icing sugar – sieved
3 Tbs Coca-Cola
2 Tbs chocolate sauce
Preheat oven to 180°C.

Whisk the egg whites until light and fluffy and then add the castor sugar. Fold in the coconut. Shape into small cookie sized balls – add a cherry to each macaroon and bake in the oven for 15 – 20 min or until golden brown.

Allow to cool completely while you make the Coca-Cola chocolate glaze.

Combine the icing sugar with the Coca-Cola, chocolate sauce and salt. Dip the macaroons into the sauce so they have a chocolate base.

Allow to cool or place in the fridge until set.
