oil or butter for frying – 1 Tbs
1 onion – finely chopped
2 cloves garlic – finely minced
1 Tbs tomato paste
1 can chopped tomatoes
½ cup Coca-Cola
1 can kidney beans
1 can cannellini beans
1 can butter beans
2 Tbs soy sauce
pinch salt
bread – for toasting
1 handful Cheddar cheese – grated
Freshly chopped parsley – garnish (optional)


In a sauce pan, fry the onion on medium heat until translucent, about 3 – 4 minutes. Add the garlic and the tomato paste and stir for another 3 minutes to allow the bitterness of the tomato to cook out. Add the Coca-Cola and soy sauce and then the 3 cans of beans.

Bring to a boil and then turn down and simmer for another 10 – 15 minutes until thick and saucy. Make sure the beans don’t get mushy though.
Toast the bread and top with the cooked beans. Layer the grated cheese on top and a light sprinkle of parsley if using.
