For the cola caviar, decant the sunflower oil into a tall jug or container. The oil needs to be at least 30 cm deep. Cover and refrigerate the oil overnight.
Combine the Coca-Cola, sugar, orange juice, vanilla essence, lemon juice, ginger, cinnamon and nutmeg in a small saucepan and simmer, 5 minutes. Remove the mixture from the heat, sprinkle in the agar agar and whisk to combine. The mixture can be whisked over low heat to remove any lumps, if needed. Decant the mixture into a plastic squeezy bottle or draw it up in a large needle-less syringe. Drop small droplets into the refrigerated oil and allow it to sit for 5-10 minutes. Spoon it out with a slotted spoon and gently rinse the caviar under cold water.
For the butterscotch, combine the butter, sugar, Coca-Cola, orange juice, vanilla, lemon juice, ginger, cinnamon and nutmeg in a small saucepan over medium heat and whisk to combine. Simmer for 10 minutes. Whisk in the cream and simmer, 5 minutes. Allow it to cool for 15 minutes.
Serve scoops of vanilla ice cream topped with the butterscotch sauce that can be served hot or cold. Top it off with some of the Coca-Cola caviar.
