For the bacon, whisk the Coca-Cola and syrup together in a mixing bowl. Add the bacon, cover and marinade in the fridge for at least 1 hour or overnight. Pre heat the oven to 200°C. Line a large baking tray with baking paper and arrange the bacon slices on top. Cook the bacon in the oven for 3-4 minutes until crisp and cut into bite-size chunks.
For the wedges, pre heat the oven to 210°C. Scatter the frozen potato wedges on a baking tray and arrange in a single layer. Bake for 20-25 minutes until crisp.
For the sauce, place all of the ingredients in a small saucepan and cook over medium heat, 15 minutes. Allow to cool for 5 minutes and then puree until fine. Season it to taste.
To assemble, top each portion of the wedges with some of the sauce. Add a few dollops of sour cream and scatter the chopped bacon, spring onions, coriander and avocado on top.
The potato wedges can be replaced with regular baked or deep-fried fries or for a healthier option try sweet potato wedges instead.
