Loaded potato wedges with Coca-Cola marinated bacon

Ingredients

  • BACON:
  • 250ml (1 cup) Coca-Cola
  • 60ml (¼ cup) syrup
  • 200g streaky bacon
  • WEDGES:
  • 1kg frozen potato wedges
  • SAUCE:
  • 1 x 400g tin chopped tomatoes
  • 375ml (1½ cups) Coca-Cola
  • 15ml (1 tbsp) balsamic vinegar
  • 10ml (2 tsp) Worcestershire sauce
  • 5ml (1 tsp) garlic, finely chopped
  • 5ml (1 tsp) ground cumin
  • 1.25ml (¼ tsp) ground ginger
  • 1.25ml (¼ tsp) ground cinnamon
  • 1.25ml (¼ tsp) smoked paprika
  • pinch nutmeg
  • salt and pepper, to season
  • 125ml (½ cup) sour cream, to serve
  • 2 (40g) spring onions, thinly sliced
  • 80ml (⅓ cup / 20g) coriander, chopped
  • 1 (350g) avocado, chopped

Method

  1. For the bacon, whisk the Coca-Cola and syrup together in a mixing bowl. Add the bacon, cover and marinade in the fridge for at least 1 hour or overnight. Pre heat the oven to 200°C. Line a large baking tray with baking paper and arrange the bacon slices on top. Cook the bacon in the oven for 3-4 minutes until crisp and cut into bite-size chunks.
  2. For the wedges, pre heat the oven to 210°C. Scatter the frozen potato wedges on a baking tray and arrange in a single layer. Bake for 20-25 minutes until crisp.
  3. For the sauce, place all of the ingredients in a small saucepan and cook over medium heat, 15 minutes. Allow to cool for 5 minutes and then puree until fine. Season it to taste.
  4. To assemble, top each portion of the wedges with some of the sauce. Add a few dollops of sour cream and scatter the chopped bacon, spring onions, coriander and avocado on top.
  5. TIP: The potato wedges can be replaced with regular baked or deep-fried fries or for a healthier option try sweet potato wedges instead.
