Drunken frozen Coca-Cola popsicles with salted peanuts

  • 1L (4 cups) Coca-Cola
  • 125ml (½ cup) cream
  • 80ml (⅓ cup) condensed milk
  • 30ml (2 tbsp) Kahlua liqueur
  • 30ml (2 tbsp) light rum
  • 80g dark chocolate, finely chopped
  • 45ml (3 tbsp) butter
  • 180ml (¾ cup / 105g) salted peanuts, finely chopped

  1. For the popsicles, whisk all of the ingredients together in a pot over medium heat and simmer, 1 minute. Pour the mixture into 12 ice lolly moulds. Freeze for 1 hour. Add a wooden lolly stick to the center of each, making sure it stands upright and freeze for at least 6 hours or overnight.
  2. For the toppings, melt the chocolate and butter over a double boiler until smooth. Place it into a glass that is wide enough to fit the frozen lollies. Transfer the finely chopped peanuts to a separate glass, also big enough to fit the frozen lollies.
  3. Line a tray with baking paper. Remove the lollies from the moulds. Dip the tops of each lolly, one at a time, into the melted chocolate and then immediately into the finely chopped peanuts. Place on the lined tray and freeze for at least 30 minutes before serving.
  4. TIP: The bottom of the frozen lolly moulds can be dipped in some warm water for a few seconds. This allows the lollies to be removed easily.
