Preheat oven to 150°C. Mix the hoisin, brown sugar, oyster sauce, garlic, ginger, Coca-Cola and lime together and pour over the ribs in a large baking dish. Cover with foil and cook for 1 hour. Allow to cool.
Grill over medium-high coals until golden and sticky, basting with the leftover sauce. Serve with fresh coriander and chilli on the side.
In a medium saucepan, heat the oil over medium heat. Add the onion and garlic; cook, stirring occasionally, until translucent, about 5 mins. Stir in the mustard and paprika and cook for 30 seconds.
Reduce the heat to medium-low and stir in the sugar, ketchup, Coca-Cola, Worcestershire, vinegar, molassess, chipotle, salt and black pepper. Cook, stirring occasionally, until thickened, 5 to 10 mins. Pour into sterilised jars and allow to cool completely upside-down.
