Coca-Cola sticky Asian ribs

Ingredients

  • 3 star anise
  • 3 small sticks cinnamon
  • ½ cup hoisin sauce
  • ½ cup brown sugar
  • ½ cup oyster sauce
  • 5 cloves garlic - crushed
  • 1 Tbsp finely grated ginger
  • 1 cup Coca-Cola
  • juice of 2 limes
  • 2 kg spare ribs
  • Fresh coriander – chopped, to serve
  • Chopped red chilli - to serve
  • Coca-Cola BBQ braai sauce
  • 1 Tbsp olive oil
  • 1 small onion - finely chopped
  • 4 garlic cloves - crushed
  • 1 Tbsp hot English mustard
  • 1 Tbsp smoked paprika
  • 3 Tbsp brown sugar
  • 1 cup tomato sauce
  • 1 cup Coca-Cola
  • 1/3 cup Worcestershire sauce
  • 1/3 cup cider vinegar
  • 1 Tbsp molasses
  • salt and freshly ground black pepper, to taste

Method

  1. Preheat oven to 150°C. Mix the hoisin, brown sugar, oyster sauce, garlic, ginger, Coca-Cola and lime together and pour over the ribs in a large baking dish. Cover with foil and cook for 1 hour. Allow to cool.
  2. Grill over medium-high coals until golden and sticky, basting with the leftover sauce. Serve with fresh coriander and chilli on the side.
  3. In a medium saucepan, heat the oil over medium heat. Add the onion and garlic; cook, stirring occasionally, until translucent, about 5 mins. Stir in the mustard and paprika and cook for 30 seconds.
  4. Reduce the heat to medium-low and stir in the sugar, ketchup, Coca-Cola, Worcestershire, vinegar, molassess, chipotle, salt and black pepper. Cook, stirring occasionally, until thickened, 5 to 10 mins. Pour into sterilised jars and allow to cool completely upside-down.
