Line a baking tray with baking paper. Place a thick wooden skewer in the centre of each apple. Push it in hard enough so that the apple is able to stand by itself. Chop the peanuts and set them aside in a large mixing bowl.
Combine the Coca-Cola, sugar, syrup, orange juice, lemon juice, vanilla essence and a tiny drop of red food colouring, if preferred, in a pot over medium heat. Stir until the sugar has dissolved and then turn the heat up slightly to bring it to a steady simmer. Cook until it reaches 150°C on a sugar thermometer. This should take about 15-20 minutes. Do not stir but rather swirl the pot regularly to prevent the sugar from burning.
Remove the sugar syrup from the heat. Dip each apple into the sugar syrup. It works best if the pot is slightly tilted so that the sugar syrup is pooled all together on one side. Allow some of the excess syrup to drip off and then press the base of the apple into the chopped peanuts. Transfer to the lined tray and allow to cool for at least 1 hour.
To remove the pulp from fresh orange or lemon juice, simply strain it through a small sieve.
