Coca-Cola beef and bean chilli

Ingredients

  • 5ml (1 tsp) olive oil
  • 1 (200g) large onion, diced
  • 5ml (1 tsp) garlic, finely chopped
  • 2 (60g) Jalapenos, finely chopped
  • 500g minced beef
  • 10ml (2 tsp) ground cumin
  • 5ml (1 tsp) smoked paprika
  • 5ml (1 tsp) salt
  • 10ml (2 tsp) cocoa powder
  • 1 x 390g tinned chopped tomatoes with herbs
  • 1 x 400g tinned black beans, drained
  • 375ml (1½ cups) Coca-Cola
  • 60ml (¼ cup) sour cream, to serve
  • 250ml (1 cup / 100g) white cheddar, grated
  • 2 (30g) spring onions, sliced
  • handful coriander, finely chopped
  • 200g (4 cups) corn chips/nachos, to serve

Method

  1. Heat the oil in a heavy based pot over medium heat. Add the onions, garlic and jalapenos and sauté, 2 minutes. Stir in the minced beef, cumin, paprika, salt and cocoa powder and fry, 8 minutes. Pour in the chopped tomatoes, beans and Coca-Cola and simmer, 20 minutes.
  2. Top each portion of chilli with some sour cream, grated cheddar, spring onions and coriander. Serve with corn chips for dipping.
  3. TIP: Use leftover chilli as a filling in sandwiches, omelettes and pancakes.
