Coca-Cola BBQ pulled chicken burgers

  • 250ml (1 cup) Coca-Cola
  • 80ml (⅓ cup / 100g) Tomato paste
  • 30ml (2 tbsp) red wine vinegar
  • 15ml (1 tbsp) Worcestershire sauce
  • 10ml (2 tsp) sugar
  • 5ml (1 tsp) garlic, finely chopped
  • 5ml (1 tsp) yellow mustard seeds
  • pinch salt and pepper
  • 1 (700g) Rotisserie chicken
  • 4 Kitke rolls
  • salted butter
  • 100g baby gem lettuce
  • 250ml (1 cup) red cabbage, shredded
  • 1 (150g) Grannysmith apple, julienned
  • 20ml (4 tsp) sour cream
  • handful micro herbs

  1. For the Coca-Cola BBQ sauce, place all of the ingredients in a saucepan and bring it up to a simmer over medium heat. Cook for 15 minutes and season it to taste.
  2. To make the pulled chicken burgers, remove the skin from the chicken meat and shred the whole rotisserie chicken into bite size pieces. Discard the bones. Add the meat to the hot BBQ sauce and simmer for 2 minutes.
  3. Heat a pan over medium heat. Slice each Kitke roll open and butter the cut-sides. Fry each half, cut-side down, for 20-30 seconds until crisp and golden. Add lettuce to the bottom half of each burger and pile some red cabbage and apple on top. Add the shredded chicken in the BBQ sauce and spoon a dollop of sour cream on top. Garnish with micro herbs and finish it off with the top half of the Kitke roll.
  4. TIP: The BBQ sauce can also be used as a basting for meat skewers, ribs, chicken and sausages that are roasted or cooked on an open fire. It can also be used as a pasta sauce or as a topping on pizzas
